#MeatlessMonday: Vegan Tropical Oat Smoothie

I don’t mean to get all mushy on this #MeatlessMonday but, I love oats!

Get it? Mushy…oats? LOL!

That’s just a little foodie humour before we dig into the business of today’s blog post.

I’m excited to share this recipe because it’s for a smoothie. Smoothies are part of my lifestyle – I have one almost every morning for breakfast. Smoothies are quick and easy to make and you can take them with you wherever you go. If they are made them right, smoothies are very nutritious.

And this is where oats come in.

Oats are great for keeping you full and providing you with fibre. They are also incredibly versatile, cheap and easy to prepare. Whether you cook them on the stove, in the microwave, soak them overnight, or even bake with them, oats should be a pantry staple.

So this #MeatlessMonday, I’m serving up a Tropical Oat Smoothie that’s packed with the goodness of oats and the deliciousness of in-season, local fruits. Hope you enjoy!

Ready In: 10 Min
Makes: 2.5 Cups

Ingredients

1 cup fresh coconut milk
1/2 cup rolled/traditional oats
1 large ripe mango
1 large ripe banana
Pulp of 1 small passion fruit *
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg

Method

Place all the ingredients in a blender and blend until the mixture is smooth.
If the mixture is too thick, add water a tablespoon at a time until the smoothie reaches the desired consistency.
Enjoy immediately or chill until ready to drink.

*If you don’t have passion fruit, use the juice of half an orange.
