
#MeatlessMonday Meal: Kale, Mango and Passion Fruit Smoothie

Given the hectic lives we all lead, having breakfast – far less a healthy one – is not always easy. That’s why smoothies are a great option for those of us who are always on the go.
They can be made the night before and kept in the fridge until the next morning. You can even prepare all the ingredients for a week’s worth of smoothies, freeze in individual servings and blend each morning. And of course, the recipe combinations are endless.
I enjoy a smoothie each morning for breakfast because they’re filling and keep me energised, but also because they provide me with several servings of nutritious fruits and vegetables. I always use fresh, seasonal fruit and include a green, leafy vegetable for good measure.
This week’s #MeatlessMonday recipe is one of my favourites. It’s got the antioxidant power of kale and the sweet tropical goodness of mango and passion fruit!
Makes: 3 1/2 Cups
Ingredients:
2 cups water
2 medium-sized kale leaf, washed and torn into pieces
2 tbsp flax seeds
1 1-inch piece turmeric, peeled
1 large mango, peeled and diced
2 large passion fruits
6 mint leaves
Method:
In a blender, add water, kale, flax seeds and turmeric. Blend on high speed. I use the Liquefy or Frappe settings. Once the mixture is a bright, smooth green, add the mango, the pulp and seeds from the passion fruit and mint leaves. Blend until smooth. Enjoy as is or chill and drink up when ready =)
